This article discusses the stance of the food industry on products and product development, particularly the elimination of trans fats. If a food product is selling, whether it is viewed as healthy or unhealthy, the manufacturer will continue to produce that food. Food makers have the responsibility to make a profit for its owners and shareholders. Trans fatty acids, the majority of which are created in edible oils during the hydrogenation process, have been the enemy in recent years as far as health is concerned.
