Researchers at Zhejiang University in China have published a report on an outbreak of Hepatitis E Virus (HEV) in a nursing home in Zhejiang Province. The outbreak was caused by consuming undercooked pig liver, resulting in an attack rate of 10.66%. The rapid stir-frying cooking method and the habit of not separating raw and cooked foods were identified as contributing factors. A case-control study showed that consuming pig liver and consuming raw fruits and vegetables were risk factors for the outbreak.
